Elderberry Syrup Recipe

Servings: 2 cups

Ingredients
  

  • 1 cup dried elderberries
  • 4 cups water
  • 1 tsp ground cinnamon, or one cinnamon stick
  • 1 tsp ground ginger, or 1" fresh ginger root, sliced
  • 1/2 tsp ground cloves optional
  • 1 cup raw honey adjust to taste, or use agave syrup for a vegan recipe

Method
 

  1. Rinse the dried elderberries under cold water to remove any debris.
  2. Combine elderberries, water, cinnamon, ginger, and cloves in a medium-sized saucepan. Bring the mixture to a boil over medium heat, then reduce to a simmer.
  3. Let the mixture simmer for 30–45 minutes, stirring occasionally. It’s ready when the liquid has reduced by about half.
  4. Use a fine mesh strainer or cheesecloth to strain the mixture into a clean bowl. Press the berries with the back of a spoon to extract all the juice. Discard the solids.
  5. Let the liquid cool to lukewarm before adding the honey. Stir well until combined.
  6. Pour the syrup into a clean glass jar or bottle. Store in the refrigerator for up to 2 months.
