Watermelon Feta and Mint Salad

Ingredients
  

  • 4 cups cubed watermelon
  • 1/2 cup crumbled feta see notes for vegan options
  • 1/4 cup fresh mint leaves chopped
  • juice of one lime
  • pinch of salt

Method
 

  1. In a large bowl, combine the watermelon cubes and chopped mint leaves.
  2. Squeeze lime juice over the salad and add a pinch of salt.
  3. Toss gently to combine, then sprinkle with feta cheese.
  4. Serve immediately or chill in the refrigerator for up to an hour.
