A friend recently posted photos of a dragonfruit she was eating on Facebook and I immediately fell in love with the colors of this fruit! This is my first time eating a dragonfruit and in addition to being very beautiful, it taste good too – very similar to kiwi in taste and texture. They’re also a good source of vitamins C and B, fiber, and antioxidants. I made it into a smoothie for my first dragonfruit cooking experiment and it made the perfect quick and healthy breakfast to enjoy while rushing to work.
- 1 dragon fruit
- 1 banana
- 1/2 cup milk (I used almond milk)
- 1/2 cup coconut milk
- 5-6 large strawberries
- 2 scoop vanilla protein powder (I use Purely Inspired Organic protein powder)
Cut your dragonfruit in half and scoop out the white, seeded inside. Add ingredients to a blender and mix well! 🙂 Makes two servings.
