Like the other recipes I’ve made lately, this one does not require that you fire up the stove or oven, keeping you as comfy as possible in this heat!

- Choose a ripe watermelon by looking for one with a uniform shape and a creamy yellow spot where it sat on the ground. It should feel heavy for its size.
- Tap the watermelon – a ripe one will have a deep, hollow sound.
- Add blueberries or strawberries for extra color and flavor, or orange or grapefruit segments for a tangy twist.
- If you’re not a fan of mint, basil or cilantro are also both delicious in this recipe.
- Store the salad in the refrigerator in an airtight container. It will stay fresh for up to 2 days. If possible, store the watermelon and mint separately and combine them just before serving to maintain the mint’s freshness. Before serving, you may need to drain off any excess liquid that accumulates in the container.
