My husband has been making amazing burritos for us lately – chicken for he and our son, and tofu for me. They’re healthy, filling, and easy to make, lending themselves especially well to bulk cooking to prep for your busy week! They’re very simple, consisting of tortillas, black beans, cilantro and lime brown rice, and your choice of protein.
To make a marinade for five pounds of protein, mix together a quarter cup of olive oil, 2 teaspoons oregano, 2 teaspoons cumin, six cloves of garlic, two ounces of poblano peppers, seven ounces of chipotle peppers in adobo sauce, and a chopped onion. Marinate for at least 30 minutes, then bake at 400 degrees for 30 minutes or until your choice of protein is thoroughly cooked.
I make the brown rice to taste – I love lots of lime juice on mine and even more cilantro!
I also opted for this post not to go all out with the styling. I’m thoroughly enjoying my winter break from school and work and I’ve loved having this extra time with my family! As much as I love staging photos for my site, even that gets pushed aside when I get this rare extra time for gaming, hikes, crafting, and relaxing together. ♥
